Good Eats for Super Bowl Sunday

Are you excited for the Super Bowl Sunday? We here at Tailwind, along with the millions of die-hard fans are fired up to see the Seattle Seahawks play against the Denver Broncos. But for those of us who weren’t fortunate enough to procure seats at the MetLife stadium in East Rutherford, New Jersey, the comfort of our simple couch at home will have to do. That being said, a Super Bowl party isn’t a Super Bowl party without some glorious treats and if you are the health conscious type who wants to refrain from pigging out, we got you covered.

Here are some lower calorie but equally delicious recipes we found on Pinterest that you can enjoy at your Super Bowl watch party.

1. Simple Garlic Bruschetta
If you absolutely need to have something that resembles a piece of bread covered with toppings, try this easy bruschetta recipe! 25 year-old Irish food connoisseur, Donal Skehan shares his recipe for simple garlic bruschetta that is so easy to make, you’d feel silly for resorting to frozen pizza. Start by pan frying some mushroom slices in olive oil before tossing in some finely chopped garlic. While you do that, drizzle a little extra virgin olive oil on some ciabatta bread and lightly toast in a griddle pan. Pile on some of the mix from the pan onto a toasted bread, sprinkle some salt and pepper to taste and serve.


2. Veggie Bars
This is a cool and delicious way to eat your vegetables! Mandy’s Recipe Box uses vegetables in her recreation of the classic dessert bar. Use crescent rolls as your base and press down two packages worth onto a jelly roll pan and bake in the oven at 350° for 10-12 minutes or until golden brown. In the mean time, blend together the mix of mayonnaise, dressing mix, softened cream cheese until smooth and creamy. Once the base is done baking, spread the mix on the crust once cooled. Then comes the fun part! Throw in your favorite chopped vegetables onto the spread and garnish with shredded cheese and season with salt and pepper to taste. Cut them into bars with a sharp knife and serve.

3. Spinach Balls
Instead of chowing down on chicken wings, try this spinach ball recipe–a delightful and delicious alternative to meatballs from The Kitchen is My Playground. Start by mixing together seasoned stuffing crumbs, frozen spinach that has been drained well, finely chopped onions, eggs, melted butter and grated Parmesan. Roll the mixture into balls on a baking sheet and pop them in oven baking at 350° for 20 minutes and serve. 


4. Chipotle Lime Grilled Shrimp and Corn Guacamole Mini Tostadas
Want to try a delicious and easy hors d’oeuvre? Closet Cooking introduces an incredibly easy recipe for mini Tostada chips topped with Chipotle Lime Grilled Shrimp and Corn Guacamole. Sounds difficult? Don’t let the fancy title fool you as it is super easy to make; it only needs a little grilling, mixing and some assembling.

First, grill about a pound of Chipotle laced shrimp and squeeze some fresh lime over it. Next, get a cup of cotija guacamole and mix it with sweet corn. You can also get a jar of the premixed variety, whichever is easiest. The next step: assemble! Spoon a bit of the guacamole mix onto a tortilla chip, top it with a grilled Chipotle shrimp, garnish with cilantro and done! All there’s left to do is lay them on a fancy plate and show them off proudly to your guests!

5. Asian Wonton Cup Sliders
While we’re on the fancy appetizer bandwagon, here’s one that requires even less cooking but is equally as delicious and full of flavor. Good Life Eats introduces us to a crunchy Asian salad in the form of cute wonton cups! Place wonton skins in a baking sheet with muffin cup inserts and line them in to create a small cup like bowl. Bake in the oven for 7 minutes at 350° and remove the baked wonton cups from the muffin pan. Once that cools, put all ingredients for the sauce and whisk well.  The next step is to slice lettuce, cabbage, green onions, carrot, cilantro as well some crushed almonds and water chestnuts.

Combine sauce with the salad mixture and mix well. For some protein, you can add some shredded cooked chicken or cooked shrimp. Once the mixing is done, spoon salad mixture generously into baked wonton cups and garnish with sesame seeds.
